AIP Beef Tacos
Ingredients:
- 1 tsp Lard can sub oil or bacon grease
- 1 c Onions chopped
- 1 Carrots shredded
- .5 c Black Olives cut in half lengthwise or sliced
- 1.5 tsp Dried Oregano
- .5 tsp Garlic Powder
- .5 tsp Turmeric
- 1 tsp Sea Salt
- 2 tsp Coconut Aminos Or Tamari
- 1 tbsp Lime Juice
- .5 head Romaine Lettuce
Instructions:
- Heat lard or oil in a large cast iron pan over medium heat. Add onions and cook 5 minutes.
- Push onion to the side of skillet, making a circle in the center. Add ground beef and let sear for 3 minutes, then flip and sear another 3 minutes.
- Break up beef with a wooden spoon and mix beef and onions together. Continue cooking until beef is cooked through about 5 minutes.
- Add carrots, olives, oregano, garlic, turmeric, and salt. Drizzle in aminos/tamari and stir. Continue cooking 5 minutes to let flavors combine. Finish with lime juice.
- Serve in lettuce leaves and top with toppings of choice like guacamole, salsa, or cheese depending on your diet.
