Asian Almond Chicken and Zoodles

Ingredients:

  • 1.5 lb Boneless Skinless Chicken Breasts diced into bite sized pieaces
  • 1 tbsp Coconut Oil
  • 3 cloves Garlic minced or pressed
  • 1 lb Zucchini
  • 1 Bell Peppers chopped, red
  • 1 c Broccoli Florets chopped
  • 1 Carrots diced
  • .5 c Onions chopped
  • .25 c Almond Butter
  • 4 tbsp Orange Juice
  • 2 tbsp Chili Sauce With Garlic
  • 2 tsp Sriracha Sauce
  • 1 tsp Fresh Ginger minced

Instructions:

  • Spiralize the zucchini or cut into spaghetti shaped noodles.
  • Heat oil in a large saute pan over medium-high heat. Once shimmering add chicken and saute until mostly cooked through and starting to brown. Remove from pan and saute the garlic, peppers, onions, and carrots over medium heat until softened.
  • Add chicken back to pan with vegetables and add broccoli. Combine the almond butter, orange juice, chili sauce, and Sriracha together and pour over chicken and vegetables to coat.
  • Add zoodles to pan and heat through. Serve warm.
