Balsamic Chicken with Roasted Vegetables
Ingredients:
- 2 lbs Boneless Skinless Chicken Thighs
- 1 bunches Asparagus ends trimmed, cut in half
- 3 Carrots sliced lengthwise
- 1 Zucchini cut into large chunks
- 2 c Onions 2 onion, chopped into large chunks
- 10 oz Mushrooms sliced
- .25 c Balsamic Vinegar
- 1 tsp Honey
- 4 tbsp Avocado Oil
- 1 tbsp Dried Rosemary
- 1 tbsp Dried Sage
- 2 tbsp Dried Thyme
- 2 cloves Garlic minced
- 1 tsp Sea Salt
Instructions:
- Preheat oven to 425 degrees.
- Wash and dry the chicken well with a paper towel.
- In a very large roasting pan, combine all the ingredients together and use your hands to arrange. NOTE: The vegetables should not touch chicken or it will steam.
- All ingredients should be spread out in a single layer; if necessary use two baking dishes or disposable tins to achieve this.
- Bake for 30–40 minutes.

Hi all, where do I get avocado oil? May I substitute coconut or olive oil? This is a great site! I really appreciate your efforts! ; )
I would sub olive oil for this recipe. We either get our avocado oil from Costco or order online to save on costs. It can get expensive if you find it at a specialty store.
