Steak Kabobs 

  1. In a large bowl, combine: 
  • 1/2 cup desired oil
  • 1/4 cup soy sauce
  • 3 cloves of minced garlic
  • 1/2 teaspoon ground ginger
  • 3 tablespoons honey
  • 2 tablespoons white vinegar
  • Black pepper as desired

 

  1. Add your desired beef/sirloin steak to the marinade mix and turn to coat. Cover the meat and keep it refrigerated for at least 8 hours or overnight. You can use other desired marinade mixes
  2.  Thread the meat onto the skewers, alternating between 1-inch pieces of bell peppers and onion. (How to cut onions without crying)
  3. Over medium heat, grill the skewers until all sides are cooked, and the veggies are done, or about 15 minutes. Don’t forget to turn the skewers often to avoid over-cooking.

Honey Garlic Grilled Salmon 

  1. In a bowl combine:
  • 1/3 cup orange juice
  • 1/3 cup reduced-sodium soy sauce
  • 1/4 cup honey
  • 1 chopped green onion 
  • 1 teaspoon ground ginger
  • 2 cloves minced garlic 

 

  1. Combine ⅔ of the marinade and the salmon fillet in another bowl, refrigerate for 30 minutes. 
  2. Place your salmon skin side down on medium heat and pour the ⅓ reserved marinade over the fillet. 
  3. Cover the lid and grill the fish for 15-18 minutes. 
  4. Serve and enjoy!

 

Grilled Coconut-Lime Chicken Thighs 

  1. Using a food processor/blender, mix these ingredients:
  • 1/2 cup coconut milk 
  • Juice of 1 lime
  • 1/2 medium onion
  • Cilantro large handful
  • 3/4 teaspoon salt
  • 1/3 Jalapeño pepper with seeds
  1. Add chicken thighs to the marinade, turn to coat, cover, and refrigerate for at least 4 hours. 
  2. Preheat the grill on high, then reduce to a medium. Add the chicken to the oiled grill, lid down, and cook for about 15 minutes. 
  3. Turn the chicken over, and cook with the lid down for another 10-15 minutes. 
  4. You can enjoy the meal with a side of healthy potato salad!
