Cauliflower Leek Soup
Ingredients:
- 1 Leeks rinsed and chopped
- .5 head Cauliflower chopped
- 4 c Chicken Broth
- 5 slices Bacon
- .5 tsp Sea Salt
- .25 tsp Ground Black Pepper
Instructions:
- Heat a large pot over medium heat. Add the leeks, cauliflower, and chicken broth. Cook over medium heat for 1 hour.
- Transfer the soup to a blender and pulse until blended smooth. Don't put too much in at once so it doesn't explode from the heat.
- Return the blend soup to the pot and place it over low heat.
- While that simmers, cook bacon over medium heat in a skillet. Cook until crispy, remove from pan and drain over paper towels. Chop up and add to soup.
- Taste and season with salt and pepper.
