Cauliflower Leek Soup

  • Heat a large pot over medium heat. Add the leeks, cauliflower, and chicken broth. Cook over medium heat for 1 hour.
  • Transfer the soup to a blender and pulse until blended smooth. Don't put too much in at once so it doesn't explode from the heat.
  • Return the blend soup to the pot and place it over low heat.
  • While that simmers, cook bacon over medium heat in a skillet. Cook until crispy, remove from pan and drain over paper towels. Chop up and add to soup.
  • Taste and season with salt and pepper.
