Korean-Inspired Sloppy Joes
Ingredients:
Pickles
- 1 Cucumbers seedless or persian
- .25 c Rice Vinegar
- 2 tbsp Coconut Sugar
- 1 tbsp Gochugaru chili paste
- 1.5 tsp Sea Salt
- 1 tsp Toasted Sesame Oil
- 1 tsp Toasted Sesame Seeds
Sloppy Joes
- 1 Pear Asian or Bosc
- 1 c Red Onions chopped
- 4 cloves Garlic minced or pressed
- 1 tbsp Fresh Ginger minced
- 1 tbsp Coconut Oil
- 1 lb Ground Beef
- .5 lb Ground Pork
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
- 1 tbsp Soy Sauce can sub coconut aminos or tamari
- 1 tbsp Worcestershire Sauce
- .33 c Gochujang
- 1 c Beef Broth
- 1 tbsp Brown Sugar
- 1 tbsp Toasted Sesame Oil
- 3 bunches Green Onions sliced, green and white parts separated
- 2 Pickled Jalapenos sliced
Instructions:
- For the pickles: Thinly slice the cucumber 1/4 to 1/8-inch thick. In a bowl, whisk up rice wine vinegar, sugar, chili flakes, salt and sesame oil. Add sliced cucumbers and toss.
- For sloppy joes: Peel and grate the pear on a wide tooth of box grater. Peel and chop the onion and slice or grate the garlic and ginger.
- Heat a skillet over medium-high to high heat. Add the oil then add the meats and brown and crumble. Season with salt and pepper. Add pear, onions, garlic, and ginger and stir a couple of minutes to soften. Add soy sauce, Worcestershire, chili paste, broth, sugar, and sesame oil. Bring to a bubble and reduce heat to simmer, 10 to 15 minutes.
- Serve sloppy joes on rolls with green onions, pickled jalapenos, and quick pickles.
