Radish Soup
Ingredients:
- 4 tbsp Coconut Oil or other oil
- 1 c Onions 1 onion, diced
- 6 cloves Garlic minced
- 2 stalks Celery chopped
- 6 c Vegetable Broth or other broth
- 2 bunches Radishes quartered
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- In a medium sized pot over medium heat, warm the coconut oil.
- Sauté onions, garlic, and celery until soft.
- Add vegetable broth and quartered radishes and simmer.
- Allow to simmer until the radishes are soft (I like to do this nice and slow).
- Salt and pepper according to your taste.
