Roasted Chicken Thighs
Ingredients:
- 3 lb Bone-In Chicken Thighs
- 4 tbsp Olive Oil
- 4 tbsp Lemon Juice
- 2 tbsp Red Wine Vinegar
- 3 tbsp Fresh Oregano picked and finely chopped
- 2 tbsp Fresh Thyme picked and finely chopped
- 3 cloves Garlic minced or pressed
- 2 tsp Sea Salt
- 1 tsp Ground Black Pepper
Instructions:
- Marinate the chicken thighs in the oil, lemon juice, vinegar, oregano, thyme, garlic, salt, and pepper in a zip lock bag for 3 hours or overnight.
- Preheat oven to 400°
- Put parchment paper on baking trays. Put chicken thighs skin-side up, leaving space between them.
- Roast for 30-35 minutes or until the internal temperature is 165° and the skin is golden brown.
