Instant Pot Beef and Sweet Potato Stew
Ingredients:
- 1 tsp Avocado Oil
- 1 c Onions diced
- 1 tbsp Fresh Ginger minced
- 3 cloves Garlic minced or pressed
- 2 Carrots sliced into half inch rounds
- 3 Sweet Potatoes peeled and cubed
- 2 tsp Dried Oregano
- 2 tsp Dried Thyme
- 1 tsp Sea Salt
- 1 c Pureed Pumpkin
- 2 c Beef Broth
- 1 lb Ground Beef
- 2 tbsp Lemon Juice
- 1 c Fresh Cilantro chopped
- 6 bunches Green Onions chopped
- 1 Avocado diced
Instructions:
- Add all ingredients, except the lemon juice, fresh cilantro, and avocado to your slow cooker. Cook on high for 3 hours or low for 6 hours
- Stir and break up the ground beef to mix within the stew and add lemon juice. Taste for seasoning and add salt or pepper as needed.
- Serve with fresh herbs and avocado on top.
