Slow Cooker Beef Bourguignon
Ingredients:
- 1 tbsp Olive Oil
- 1 lb Beef Stew Meat
- 2 tsp Sea Salt
- 1 tsp Ground Black Pepper
- .5 lb Bacon cut into 1-inch pieces
- 1 c Red Onions 1 onion, chopped
- 3 cloves Garlic minced or pressed
- 5 Carrots cut into 1-inch pieces
- 2 tbsp Dried Thyme
- 2 tbsp Dried Parsley
- 1 c Red Wine
- .5 c Beef Broth
- 2 Sweet Potatoes peeled and cubed
- 1 tbsp Maple Syrup
Instructions:
- Heat the olive oil in a large skillet. Season beef with salt and pepper then add to skillet, browning for 3 minutes.
- Add bacon, onions, and garlic. Cook until onions are translucent, about 2 minutes, scraping up bits from the pan.
- Add the beef, bacon, and onion mixture to the slow cooker
- Add all remaining ingredients. Cook on low for 5 hours.
