Air Fryer Bacon Wrapped Sea Scallops
Ingredients:
- 1 tbsp Fresh Basil chopped
- 0.50 Lemons juice
- 8 slices Bacon uncured
- 8 Sea Scallops large
- 3 tsp Pine Nuts chopped
- 1 tsp Fruity Balsamic Glaze
Instructions:
- Bring bacon to room temperature. Cut bacon strips in half lengthwise, trimming the extra fat, and place them on a plate.
- Wrap the bacon around each scallop with a small overlap and use a toothpick to secure the bacon through the overlap. Try to pierce the scallop from one side all the way through to the other side, so the bacon stays in place.
- Preheat the air fryer to 390°F
- When the air fryer reaches 390°F, place four scallops in the basket, leaving some space between each scallop. Set the timer for 12 minutes. Halfway through, open the basket and turn the scallops over. When the timer goes off, sprinkle some chopped pine nuts on top of each scallop and cook three additional minutes or until the nuts are brown.
- When the scallops are done, take the batch out to a platter and keep them covered. Place the next batch of 4 scallops in the basket and repeat.
- When the last batch is done, take out the scallops on to the platter with the first batch, drizzle balsamic glaze, and juice of half the lemon.

While I don’t state this in the book, these recipes are totally adaptable for making them in your oven
– regular and convection. So, to achieve the optimized result of crispy and airy texture, you have to
place the food on a wired rack so there’s air flow all around the food. Just place a cookie sheet at the
bottom of the oven to catch any oils or food particles that drop from the food. Also, you will have to
adjust the oven temperature and check for doneness. A convection oven will cook faster since the
hot air will circulate, like the air fryer."
