BBQ Beef Stuffed Sweet Potatoes

Instructions:

  • Combine brown sugar, tomato paste, worcestershire sauce, chili powder, half the salt and pepper, and cumin. Rub paste over beef roast.
  • Place onions on the bottom of the slow cooker and roast on top. 
  • Rub sweet potatoes with oil and remaining half of salt and pepper. Wrap each potato in parchment paper and place on top of roast. Cover and cook on Low for 6-8 hours. 
  • Unwrap the potatoes and split down the middle. Shred beef with forks and stir to combine with onions. 
  • Top potatoes with shredded beef, cheese, sour cream, and green onions.
