BBQ Beef Stuffed Sweet Potatoes
Ingredients:
- 4 Sweet Potatoes
- 1 lb Boneless chuck roast
- 2 tbsp Brown Sugar
- 2 tbsp Tomato Paste
- 1 tbsp Worcestershire Sauce
- 1 tbsp Chili Powder
- 1 tsp Cumin ground
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
- 1 c Onions sliced
- 1 tsp Olive Oil
- .5 c Cheddar Cheese shredded
- 4 tbsp Sour Cream
- 1 bunches Green Onions chopped
Instructions:
- Combine brown sugar, tomato paste, worcestershire sauce, chili powder, half the salt and pepper, and cumin. Rub paste over beef roast.
- Place onions on the bottom of the slow cooker and roast on top.
- Rub sweet potatoes with oil and remaining half of salt and pepper. Wrap each potato in parchment paper and place on top of roast. Cover and cook on Low for 6-8 hours.
- Unwrap the potatoes and split down the middle. Shred beef with forks and stir to combine with onions.
- Top potatoes with shredded beef, cheese, sour cream, and green onions.
