Buttered-Up Steak, Potatoes, and Green Beans

Ingredients:

  • 1.5 lb Yukon Gold Potatoes diced
  • 4 cloves Garlic thinly sliced
  • 1 tsp Fresh Parsley chopped
  • 1.5 lb Sirloin Steak 4 steaks
  • 12 oz Green Beans cleaned
  • 2 tsp Dijon Mustard
  • 3 tbsp Olive Oil divided
  • 2 tbsp Butter divided
  • 2 tsp Sea Salt divided
  • 1 tsp Ground Black Pepper divided

Instructions:

  • Preheat oven to 425 degrees. Take out butter and let sit at room temperature.
  • Toss potatoes with 1 tbsp oil, .5 tsp salt, and .25 tsp pepper onto a baking sheet. Roast in oven until browned and tender, about 20-25 minutes.
  • While potatoes roast. Heat 1 tbsp oil in a large pan over medium-high heat. Season steak with 1 tsp salt and .5 tsp pepper. Add to pan and cook until browned, 2-3 minutes per side. Remove baking sheet with potatoes from oven and toss potatoes. Add steak to sheet pan, return to oven, and roast to desired doneness, 5-7 minutes. Remove steak from sheet pan and let rest 5 minutes. 
  • Meanwhile, heat 1 tbsp oil in same pan used for steak over medium heat. Add green beans and cook, tossing until tender but still  a little crisp, 4-5 minutes. Add garlic and cook until fragrant, 30-60 seconds. Season with remaining .5 tsp salt and .25 tsp pepper. Set aside.
  • Mix softened butter, mustard, and parsley in a small bowl. Season with a pinch of salt and pepper.
  • Slice steak against the grain, top with herb butter, and serve with potatoes and green beans.
