Cajun Shrimp and Cauliflower ‘Grits’
Ingredients:
- 1 tsp Sea Salt
- 1 head Cauliflower cut into florets
- .25 c Whole Milk
- 2 tbsp Parmesan Cheese
- .25 tsp Sea Salt
- .5 tbsp Olive Oil
- .25 c Onions chopped
- 2 cloves Garlic minced or pressed
- 10 Shrimp peeled and deveined
- .5 tsp Cajun Seasoning
- 2 tbsp Fresh Parsley chopped
Instructions:
- In a medium pot, bring plenty of water to a boil. Add 1 tsp of salt and cauliflower florets, and boil until the cauliflower becomes very soft.
- Drain water. Add milk, Parmesan cheese, and salt and mash the cauliflower. Adjust the amount of milk and salt to taste. Set aside.
- In a sauté pan, heat olive oil and sauté onion for a few minutes. Add garlic and sauté until the garlic is fragrant.
- Add shrimp, sprinkle cajun seasoning and salt and sauté until the shrimp is cooked. Turn off the heat and add parsley.
- Split mashed cauliflower between plates and add sautéed shrimp on top.
