Slow Cooker Creamy Coconut Green Chili Chicken Soup
Ingredients:
- 2 lb Boneless Skinless Chicken Breasts or thighs
- 1 c Onions 1 onion, chopped
- 6 Carrots peeling and chopped into bite-size pieces
- 1 c Diced Green Chiles
- 1 qt Chicken Broth
- 1 tsp Garlic Powder
- 1 tsp Sea Salt
- .5 tsp Cumin
- .5 tsp Ground Coriander
- .25 tsp Ground Black Pepper
- 1 c Full Fat Canned Coconut Milk
- 3 tbsp Coconut Flour
- .25 c Fresh Cilantro for serving, optional
- 1 Limes for serving, optional
Instructions:
- Add the diced green chilies, chicken broth, garlic powder, salt, cumin, coriander, and black pepper to slow cooker.
- Stir until well combined.
- Cover and cook on low for 5 hours.
- About 10 minutes before serving, stir in the coconut milk or cream and the coconut flour. The coconut flour will help thicken the soup just a little.
- Taste for salt and adjust as needed.
- Garnish with fresh cilantro and a splash of lime juice.
