Easy Cauliflower Salad
Ingredients:
- 1 heads Cauliflower broken up into bite-sized pieces
- 1 c Onions 1 onion, sweet white onions taste best
- .25 c Mayonnaise
- 4 tbsp Olive Oil
- .25 c Apple Cider Vinegar
- 1 tbsp Honey optional
- .5 tsp Sea Salt
- .5 tsp Ground Black Pepper
- .25 c Pumpkin Seeds or nut/seed of your choice
- .25 c Dried Cranberries or dried berry of your choice
Instructions:
- Whisk together the mayonnaise, oil, vinegar, honey, salt, and pepper.
- Add the pumpkin seeds, dried cranberries, and the dressing to cauliflower and onion.
- Toss together well.
- Let marinate for a couple hours or overnight.
- This salad will also keep a couple days in the fridge without going bad or getting soggy.
