Easy Chicken Stir-Fry
Ingredients:
- 1 lb Boneless Skinless Chicken Breasts
- 1 c Onions 1 onion, thinly sliced
- 4 cloves Garlic minced
- 1.5 tbsp Fresh Ginger grated or minced
- 2 tbsp Coconut Oil
- 2 c Sugar Snap Peas
- 1 lb Green Cabbage shredded
- 3 c Baby Spinach
- .5 tsp Garlic Powder
- .5 tsp Onion Powder
- 1 tsp Sea Salt
- 2 tbsp Honey
- .3 c Coconut Aminos Or Tamari
- .3 c Chicken Broth
- .5 tsp Ground Black Pepper
Instructions:
- Mince the ginger, and set aside.
- Heat a large skillet or wok over medium heat and add the coconut oil.
- When the oil is heated, add the chicken, onions, garlic, and ginger.
- Cook until the chicken and onions are browned. While the chicken is cooking, prepare the other vegetables.
- Once the chicken has browned, add the rest of the vegetables, the spices, honey, coconut aminos or tamari, and chicken broth. Stir to combine and cover with the lid.
- Cook for 5–8 minutes and remove from heat. Serve.
