  • Mince the ginger, and set aside.
  • Heat a large skillet or wok over medium heat and add the coconut oil.
  • When the oil is heated, add the chicken, onions, garlic, and ginger.
  • Cook until the chicken and onions are browned. While the chicken is cooking, prepare the other vegetables.
  • Once the chicken has browned, add the rest of the vegetables, the spices, honey, coconut aminos or tamari, and chicken broth. Stir to combine and cover with the lid.
  • Cook for 5–8 minutes and remove from heat. Serve.
