Grilled Peach and Avocado Salad
Ingredients:
- 4 Peaches fresh, peeled
- 7 tbsp Avocado Oil
- 2 tbsp White Wine Vinegar
- 1 tsp Honey
- 2 Avocado peeled and quartered
- 6 c Arugula loosely packed
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- Preheat grill to medium high. Chop 1 peach and place in blender. Process peach, 6 tablespoons of oil, vinegar, and honey until smooth. Add salt and pepper to taste.
- Halve remaining 3 peaches. In a large bowl, gently toss peaches and avocados in remaining tablespoon of oil; season with salt and pepper.
- Grill peach halves and avocado quarters and cover with grill lid, turning once until charred, about 2 minutes on each side. Slice and serve over arugula. Top with peach vinaigrette and Parmesan.
