  • Preheat grill to medium high. Chop 1 peach and place in blender. Process peach, 6 tablespoons of oil, vinegar, and honey until smooth. Add salt and pepper to taste.
  • Halve remaining 3 peaches. In a large bowl, gently toss peaches and avocados in remaining tablespoon of oil; season with salt and pepper.
  • Grill peach halves and avocado quarters and cover with grill lid, turning once until charred, about 2 minutes on each side. Slice and serve over arugula. Top with peach vinaigrette and Parmesan.
