Honey Dijon Baked Cod
Ingredients:
- 1 lb Cod Filets
- 1 tbsp Coconut Oil or oil of your choice
- .25 c Dijon Mustard
- 2 tsp Honey
- 2 tbsp Lemon Juice
- .25 tsp Sea Salt
- .25 tsp Ground Black Pepper
Instructions:
- Preheat oven to 400 degrees.
- Grease a glass baking dish with the coconut oil.
- Place the cod fillets in the baking dish.
- In a separate bowl, whisk together the mustard, honey, lemon juice, sea salt, and black pepper until smooth.
- Using a spoon, spread the glaze over the cod.
- Bake at 400 degrees for 15 to 20 minutes or until the cod is white throughout and flakes with a fork.
- Remove from oven and serve with your choice of side.
