Instant Pot Kalua Pork
Ingredients:
- 4 lb Pork Butt Roast
- 1.5 tbsp Sea Salt
- 1 tbsp Coconut Oil
- 1 c Water
- 2 tbsp Liquid Smoke
Instructions:
- Rub pork with Hawaiian sea salt. Select SAUTE and add oil to the cooking pot.
- When hot, brown pork roast on all sides, about 3 minutes per side. Remove to a platter when browned.
- Turn Instant Pot off (CANCEL) and add water and liquid smoke to the cooking pot. Add browned roast and any accumulated juices to the pot.
- Select HIGH PRESSURE and set timer for 90 minutes. When beep sounds, hit CANCEL and use a natural pressure release to release pressure. When valve drops carefully remove lid.
- Remove the meat from the Instant Pot and shred with two forks (discard excess fat as you shred). Add some of the juices from the Instant Pot to moisten the meat.
- Serve with your choice of sides. Also tastes great as tacos, burritos, etc.
