Instant Pot Red Beans and Sausage
Ingredients:
- 1 c Onions 1 onion, chopped
- 1 stalks Celery
- 0.50 Bell Peppers chopped
- 3 cloves Garlic
- 1 lb Smoked Sausage sliced
- 1 tbsp Olive Oil
- 1 lb Dried Red Beans rinsed
- 1 tsp Dried Thyme
- 1 tsp Dried Oregano
- 1 Dried Bay Leaf
- 2 tbsp Cajun Seasoning
- 1 tsp Sea Salt
- 1 tsp Dried Parsley
- 0.25 tsp Cumin ground
- 5 c Chicken Broth
Instructions:
- Slice the sausages.
- Set pot to SAUTE then add oil and sausage. Brown sausage pieces on both sides.
- Rinse the red beans in cool water while the sausage is browning.
- Add the red beans, spices, minced garlic, onion, celery, green pepper, and salt. Pour in broth to cover. Stir to combine.
- Seal lid and bring pot to HIGH PRESSURE. Cook for 20 minutes. Allow pressure to drop naturally. Remove lid, stir, and serve over rice.
