Lemon Artichoke Mayonnaise
Ingredients:
- 2 c Mayonnaise store-bought or make your own
- 2 tbsp Fresh Parsley finely minced
- 2 tbsp Red Onions finely minced
- .25 c Artichoke Hearts frozen then thawed and chopped
- 1 tbsp Dijon Mustard
- 1 tbsp Lemon Juice
- 2 tsp Lemon Zest
- .25 tsp Sea Salt
- .25 tsp Ground Black Pepper
- .25 tsp Garlic Powder
- .25 tsp Onion Powder
Instructions:
- If making your own mayo, make your mayonnaise.
- Once you have your mayo ready, finely mince your parsley, onion and artichoke hearts and place them in a bowl.
- Add the dijon mustard, lemon juice and zest, sea salt, pepper, garlic powder, and onion powder.
- Add the mayo and use a spatula to gently fold the ingredients into the mayo. Careful not to stir too vigorously or the mayo will lose some of its texture and fluff.
- Store in the fridge up to 1 week.
