Pork and Pepper Stir Fry
Ingredients:
- 1 lb Ground Pork
- 2 tbsp Coconut Oil or fat of your choice
- 1 c Onions 1 onion, diced
- 0.75 c Mushrooms cleaned, stems removed, and diced
- 1 Bell Peppers diced
- .5 Apples diced
- 1 tsp Dried Thyme
- 1 tsp Dried Oregano
- 1 tsp Cumin ground
- 1 tbsp Apple Cider Vinegar
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- Heat a large skillet with coconut oil or fat of your choice
- Chop apple and add the onion, mushrooms, pepper, and apple to the pan.
- Cook for 2–3 minutes, then add the ground pork, and stir to combine.
- When the pork is about half way cooked, add in the dried herb, cumin, apple cider vinegar, salt, and pepper.
- Continue cooking until pork is done, approximately 8 minutes. Adjust salt and pepper if needed.
