Roasted Broccoli
Ingredients:
- 1 lb Broccoli 2 heads, cut to bite size pieces
- 3 cloves Garlic minced or pressed
- 3 tbsp Coconut Oil
- 1 tbsp Lemon Juice
- 3 tbsp Pine Nuts
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- Preheat the oven to 200C/400F and get out a baking tray.
- Toss broccoli with coconut oil, salt, and pepper.
- Place into the oven for 15-20 minutes, tossing it half way through cooking.
- Watch closely that it doesn’t burn.
- Remove from the oven, allow to cool slightly then stir and squeeze lemon juice the broccoli and toss with the pine nuts.
- Enjoy warm or as a cool salad.
