Ingredients:

Salad Ingredients

  • 6 oz Salmon Fillets
  • .25 tsp Sea Salt
  • .125 tsp Ground Black Pepper
  • .5 tsp Garlic Powder
  • 1 tbsp Lemon Juice
  • 1 tbsp Olive Oil
  • 1 Avocado peeled, pitted, and sliced
  • 4 c Mixed Baby Greens
  • 2 Eggs hard boiled, peeled and sliced
  • 4 slices Bacon cooked and chopped
  • 1 c Cherry Tomatoes halved
  • .5 Cucumbers sliced or chopped
  • .5 c Blue Cheese crumbled

Vinaigrette

Instructions:

  • Pat salmon dry. Rub both sides with olive oil and lemon juice. Season with salt, pepper and garlic powder.
  • Heat broiler and line a baking sheet with parchment paper (or foil). Place salmon on pan and broil 8 to 10 minutes or until fish flakes easily when tested with a fork. (You can also instead grill the salmon over medium-high heat for 4-5 minutes per side.)
  • Whisk together all the ingredients for the vinaigrette. Drizzle 1 teaspoon over the sliced avocado (to prevent from browning).
  • In a large bowl, add the lettuce, then top with flaked salmon, eggs, avocado, bacon, tomatoes, cucumber and cheese. Drizzle with dressing right before serving.
