Salmon Cobb Salad
Ingredients:

- 6 oz Salmon Fillets
- .25 tsp Sea Salt
- .125 tsp Ground Black Pepper
- .5 tsp Garlic Powder
- 1 tbsp Lemon Juice
- 1 tbsp Olive Oil
- 1 Avocado peeled, pitted, and sliced
- 4 c Mixed Baby Greens
- 2 Eggs hard boiled, peeled and sliced
- 4 slices Bacon cooked and chopped
- 1 c Cherry Tomatoes halved
- .5 Cucumbers sliced or chopped
- .5 c Blue Cheese crumbled
Vinaigrette
- 4 tbsp Apple Cider Vinegar
- 2 tbsp Sour Cream
- .5 tsp Garlic Powder
- 3 tbsp Olive Oil
- .25 tsp Sea Salt
- .125 tsp Ground Black Pepper
Instructions:
- Pat salmon dry. Rub both sides with olive oil and lemon juice. Season with salt, pepper and garlic powder.
- Heat broiler and line a baking sheet with parchment paper (or foil). Place salmon on pan and broil 8 to 10 minutes or until fish flakes easily when tested with a fork. (You can also instead grill the salmon over medium-high heat for 4-5 minutes per side.)
- Whisk together all the ingredients for the vinaigrette. Drizzle 1 teaspoon over the sliced avocado (to prevent from browning).
- In a large bowl, add the lettuce, then top with flaked salmon, eggs, avocado, bacon, tomatoes, cucumber and cheese. Drizzle with dressing right before serving.
