Shrimp Scampi
Ingredients:
- 1.5 lb Shrimp peeled and deveined
- 2 tbsp Butter or ghee
- 2 cloves Garlic minced
- .25 c Dry Vermouth
- 1 tbsp Lemon Juice
- 1 tsp Lemon Zest
- 2 tsp Fresh Parsley flat, finely chopped
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- Place shrimp on a plate and pat them completely dry with a paper towel then season with salt and pepper.
- Melt butter in a large skillet over medium heat.
- Add garlic and cook for 1 minute.
- Add shrimp, in one layer, without moving them, for 1 minute then turn them over and cook for 2 minutes more.
- Add in the vermouth and lemon juice.
- Boil the liquid until slightly thickened, about 30 seconds.
- Stir in the lemon zest and chopped parsley into the sauce.
- Serve over pasta of choice.
