Slow Cooker Chicken with Carrots and Potatoes
Ingredients:
- 1.5 c Onions sliced
- 2 c Baby Carrots
- 1 lb Red Potatoes sliced
- .5 c Chicken Broth
- .5 c White Wine
- 3 cloves Garlic minced or pressed
- .75 tsp Sea Salt divided
- .5 tsp Ground Black Pepper divided
- 1 tsp Paprika
- 6 Bone-In Chicken Thighs skinned
- 1 tsp Olive Oil
- 1 tbsp Fresh Thyme chopped
Instructions:
- Place onion in slow cooker and top with carrots and potatoes.
- Combine both, wine, thyme, garlic, .5 tsp salt and .25 tsp pepper. Pour over vegetables.
- Combine paprika, remaining salt and pepper and rub over chicken. Heat a large non-stick skillet over medium-high heat. Add oil. Add chicken. Cook 3 minutes on each side or until browned. Arrange chicken on top of vegetables.
- Cover and cook on LOW for 3.5 hours or until chicken is done and vegetables are tender.
