Slow Cooker Rustic Braised Chicken and Mushrooms
Ingredients:
- 1.5 lb Bone-In Chicken Breasts 4 breasts
- 1 c Mushrooms
- .25 lb Bacon coarsely chopped
- 1 c Onions 1 onion, chopped
- .25 c Tomato Paste
- 2 cloves Garlic minced
- .5 tsp Dried Thyme
- .25 c White Wine
- 2 tbsp Tapioca Flour
- .5 tsp Sea Salt
- .5 tsp Ground Black Pepper
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- In a bowl, microwave mushrooms, bacon, onion, tomato paste, garlic, and thyme for 5 minutes, stirring occasionally until vegetables are softened. Transfer to slow cooker
- Add wine, tapioca, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
- Season chicken with salt and pepper then nestle into slow cooker. Cover and cook until chicken is tender, 3 to 4 hours on low.
- Transfer chicken to serving dish, remove skin.
- Season braising liquid with salt and pepper to taste then pour sauce over chicken. Serve.
