  • In a bowl, microwave mushrooms, bacon, onion, tomato paste, garlic, and thyme for 5 minutes, stirring occasionally until vegetables are softened. Transfer to slow cooker
  • Add wine, tapioca, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
  • Season chicken with salt and pepper then nestle into slow cooker. Cover and cook until chicken is tender, 3 to 4 hours on low.
  • Transfer chicken to serving dish, remove skin.
  • Season braising liquid with salt and pepper to taste then pour sauce over chicken. Serve.
