Southern Red Rice
Ingredients:
- 1 c White Rice
- .375 lb Bacon 6 slices
- 1 c Onions 1 onion, chopped
- 1 Bell Peppers chopped
- 28 oz Diced Tomatoes 1 can
- .5 tsp Dried Oregano
- 1 tsp Sea Salt
- 1 tsp Ground Black Pepper
- .5 lb Ham Steak diced
Instructions:
- Prepare rice according to package directions. Set aside.
- In a large skillet, fry bacon until crisp; reserve 2 tablespoons of bacon grease.
- Sauté onion and bell pepper in bacon grease about 5 minutes. Add tomatoes and seasonings. Cook on medium heat for 15 to 20 minutes.
- Fold in cooked rice and diced ham. Heat for 10 minutes.
