Southwest Shrimp Ceviche
Ingredients:
- .5 lb Shrimp cooked and peeled
- 1 Limes juice
- 1 Avocado peeled and chopped
- 1 c Cherry Tomatoes halved or quartered
- .25 c Red Onions diced
- 2 tbsp Fresh Cilantro
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- Coarsely chop ½ of the shrimp.
- Combine chopped shrimp, whole shrimp, lime juice, chopped avocado, tomatoes, onions, and cilantro.
- Season to taste with sea salt and pepper.
- Serve and enjoy!
