Spinach Salad with Bacon
Ingredients:
- 1 c Baby Spinach washed and dried
- 2 Eggs boiled
- .5 lb Bacon about 8 slices
- 3 tbsp Red Wine Vinegar
- 1 tsp Maple Syrup
- 1 tsp Sea Salt to taste
- .5 tsp Ground Black Pepper
Instructions:
- Place the spinach into a large mixing bowl and set aside.
- Transfer the bacon fat to a small saucepan, set over low heat, and whisk in the red wine vinegar and maple syrup. Season with a small pinch each of kosher salt and black pepper.
