Vegetable Stir Fry
Ingredients:
- 2 tbsp Coconut Oil
- 2 cloves Garlic minced or pressed
- 1 tbsp Fresh Ginger minced or pressed
- .5 c Red Onions sliced
- 8 oz Shiitake Mushrooms sliced
- .5 lb Bok Choy chopped
- 1 c Broccoli chopped
- 1 Carrots shredded
- 2 tbsp Coconut Aminos Or Tamari
Instructions:
- In a large skillet heat up coconut oil over medium-high heat. When it starts to shimmer add garlic and ginger stirring constantly until aromatic, about 1-2 minutes.
- Add onions and mushrooms stirring until tender, 3-5 minutes.
- Add bok choy and broccoli. Stir together with other ingredients and cover for 3-5 minutes to allow greens to steam.
- Add carrots and coconut aminos/tamari. Stir ingredients together and continue to cook another 2-4 minutes to allow carrots to become tender and serve!
