Place chopped carrots celery, onion, and 1 slice of bacon in a food processor. Pulse until vegetables and bacon reach a fine mince.
Place vegetable mixture in a large bowl. To the vegetable mixture, add veal, egg, coconut flour, coconut aminos or tamari, mustard powder, marjoram, sea salt, and black pepper. With clean hands, mix well to combine.
Transfer meatloaf mixture to a 5x9 inch loaf pan. Place the remaining 3 slices of bacon on top of the meatloaf.
Place in the oven and bake for 60 minutes.
Remove from oven and let cool. Serve with your favorite side dish.
