Instructions:
In a large bowl, make the dressing by mixing lemon juice, olive oil, cilantro, scallions, garlic and cumin.
Add drained and rinsed beans, chopped tomatoes, and corn to the bowl.
Add quinoa to the salad and mix everything thoroughly.
