Ham and Sweet Potato Soup
Ingredients:
- 1 lb Ham Steak organic if possible, chopped into bite-sized pieces.
- 1 c Onions 1 onion, diced
- 2 stalks Celery diced
- 2 Sweet Potatoes diced
- 4 c Beef Broth
- 1 tsp Sea Salt or more to taste
- 1 tsp Onion Powder
- .5 tsp Garlic Powder
- 1 Dried Bay Leaf
- .5 c Full Fat Canned Coconut Milk or other non-dairy milk (optional)
- 2 tbsp Arrowroot Powder optional
Instructions:
- Chop the ham, onions, celery, and sweet potatoes into bite-sized pieces.
- Then, toss all ingredients (except arrowroot) into a slow cooker and mix with a spoon to combine.
- Cook on high for 3 hours or low for 4–6 hours.
- About 15 minutes before serving, take a few tablespoons of liquid and mix with the arrowroot in a separate bowl. Pour mixture back in slow cooker and let thicken before serving.
