Russian Beef and Cabbage Soup
Ingredients:
- 1 tbsp Olive Oil
- 2 c Onions 2 onions, chopped
- 2 cloves Garlic minced
- 1.5 lb Ground Beef
- 2 tbsp Tomato Paste
- 0.5 tsp Dried Thyme
- 7 c Beef Broth
- 2 c Sauerkraut drained and rinsed (like Boar's Head or homemade); divide in half.
- 2 tbsp Fresh Dill minced
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- In a large pot, warm oiive oil then add onions and garlic, cooking until fragrant, about 3 minutes.
- Season beef with salt and pepper then add to pot. Allow beef to brown, about 5 minutes.
- Add tomato paste and thyme, stirring to combine.
- Add broth and 1 cup of sauerkraut.
- Reduce heat to simmer, cover, and cook for 30 minutes.
- Stir in remaining sauerkraut and dill. Season with salt and pepper to taste.
