Healthy Taco Salad
Ingredients:
Meat
- 1 tbsp Taco Seasoning
- 1 lb Ground Chicken can sub ground turkey or ground beef
- 2 tbsp Tomato Paste
- 2 tsp Apple Cider Vinegar
Salad Bowls
- 2 c Romaine Lettuce chopped
- 2 c Butter Lettuce chopped
- 1 c Canned Corn drained and rinsed
- .5 c Canned Black Beans drained and rinsed
- .5 c Green Cabbage shredded
- .5 c Cherry Tomatoes
- 1 Avocado pitted and sliced
- 1 Limes quartered
- .5 c Cheddar Cheese shredded
- .25 c Salsa
Dressing
- 1 Avocado pitted and peeled
- 2 tbsp Fresh Cilantro chopped
- 2 tbsp Lime Juice
- 2 tbsp Orange Juice
- 2 tbsp Olive Oil
- .25 tsp Sea Salt
Instructions:
Meat
- In a large nonstick skillet, over medium-high heat, cook the ground meat, breaking down into small pieces while it cooks. After about 3 minutes, add the taco seasoning and continue cooking until the meat is no longer pink and cooked through. Stir in the tomato paste and vinegar and cook for another 2 minutes or until everything is heated through. Taste and add more seasoning as needed.
Dressing
- While the meat is cooking, add the avocado, cilantro, lime, orange juice, olive oil, and salt to a food processor. Process until smooth.
Bowls
- Add lettuce to a large bowl. Top with cooked turkey, cherry tomatoes, corn, black beans, and shredded cabbage. Add the dressing and toss to combine. Serve immediately avocado, lime, and additional taco toppings as desired.
