Mediterranean Broccoli Salad
Ingredients:
Salad
- 5 c Broccoli Florets
- .5 c Artichoke Hearts
- .5 c Sun Dried Tomatoes in olive oil
- .5 c Kalamata Olives pitted and halved
- .33 c Red Onions chopped
- .25 c Sunflower Seeds roasted
Dressing
- 2 c Greek Yogurt
- 1.5 tsp Lemon Zest
- 1 tbsp Lemon Juice
- 2 tsp Coconut Sugar
- 1.75 tsp Dried Oregano
- 2 cloves Garlic minced or pressed
- 1.5 tsp Dried Basil
- 1.5 tsp Dried Thyme
- 1 tsp Sea Salt
- .25 tsp Ground Black Pepper
- 2 tbsp Olive Oil can use oil from sun dried tomatoes
Instructions:
- In a large bowl, mix together ALL of the salad ingredients.
- In a medium bowl, stir together all of the dressing ingredients,
- Pour the dressing over the broccoli and stir to coat well. Cover and refrigerate for at least 2 hours, up to overnight, so that broccoli can absorb the dressing and develop the flavor.
