Nourishing Chicken Soup
Ingredients:
- 2 tbsp Coconut Oil or other oil
- 3 Boneless Skinless Chicken Breasts chopped into bite-sized pieces (can also use chicken thighs)
- 1 c Onions 1 onion, diced
- 6 cloves Garlic chopped
- 4 stalks Celery diced
- 2 Carrots diced
- 6 c Chicken Broth
- 5 Dried Bay Leaf
- 1 c Baby Spinach
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- In a large pot, warm the coconut oil. Add the chopped chicken and sauté until browned and no longer pink.
- Next add the onions, garlic, celery, and carrots and cook until tender. You may need to add a little extra oil.
- Then add in the chicken broth and bay leaves and bring to a boil
- Add salt and pepper to taste.
- Remove the bay leaves and stir in spinach right before serving.
