chopped into bite-sized pieces (can also use chicken thighs)

Instructions:
In a large pot, warm the coconut oil. Add the chopped chicken and sauté until browned and no longer pink.
Next add the onions, garlic, celery, and carrots and cook until tender. You may need to add a little extra oil.
Then add in the chicken broth and bay leaves and bring to a boil
Add salt and pepper to taste.
Remove the bay leaves and stir in spinach right before serving.
