Quinoa and Chickpea Lettuce Wraps
Ingredients:
- 2 c Quinoa cooked
- 1.5 c Chickpeas cooked
- 1 Bell Peppers chopped
- 0.25 bunches Kale approximately 1 cup, chopped
- 2 Carrots diced
- 2 stalks Celery diced
- 2 tbsp Olive Oil
- 2 tbsp Lemon Juice
- 1 tsp Dijon Mustard
- 1 head Leaf Lettuce
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- In a large bowl, mix the quinoa, chickpeas, pepper, kale, carrots, and celery together.
- In a separate bowl, whisk together the oil, lemon, salt, pepper, and dijon mustard. Pour over the quinoa mixture.
- Spoon quinoa salad into romaine leaves and serve.
