Raspberry Pecan Refrigerator Oatmeal
Ingredients:
- 2 c Quick-Cooking Oats
- 8 tbsp Chia Seeds
- 2 c Fresh Raspberries
- .25 c Honey
- 1 c Pecans chopped
- 4 c Kefir homemade or storebought
Instructions:
- You will need 4 pint-sized Mason jars for this (or you could also use a bowl as well).
- In each jar, combine the 1/2 cup oats, 2 tbsp chia seeds, 1/2 cup raspberries, 1 tbsp honey, and 1/4 cup pecans. Stir or shake until combined.
- Then add 1 cup of kefir to each jar. You’ll want to leave about 1 inch of headspace.
- Stir well to combine. Give it a taste and add more honey if it’s too sour for you. Homemade kefir needs more honey than storebought.
- Place in the fridge for several hours or overnight before enjoying, chilled or at room temperature.
