Slow Cooker Pork Chili Verde
Ingredients:
- 3 lb Pork Loin diced to bite size
- 4 Carrots sliced
- 1 c Onions chopped
- 4 cloves Garlic minced or pressed
- 3 tbsp Olive Oil
- 28 oz Enchilada Sauce green
- .25 c Water
- 2 Jalapenos minced
- 1 c Fresh Cilantro chopped
Instructions:
- In a large skillet, saute the pork, carrots, onion and garlic in oil in batches until pork is browned about 5-7 minutes each batch. Transfer to a slow cooker. Add the enchilada sauce, water, jalapenos and cilantro. Cover and cook on LOW for 6 hours or until meat is tender. Serve with rice and tortillas.
