  • Press salt and pepper into both sides of steaks. Working in batches, heat 2 tablespoons of oil in a large skillet over medium-high heat. Add half of the steaks and cook 2 to 3 minutes on each side for rare, or longer, to desired degree of doneness. Remove steak and keep warm. Repeat until all steaks are cooked.
  • Add 2 tbsp of oil, onion, parsley, and thyme to skillet. Cook until onion is soft and slightly glazed, 2 to 3 minutes.
  • Pour in wine and boil until reduced to about 1/4 cup, about 5 minutes. Remove from heat and swirl in butter. Spoon sauce over steaks and serve at once.
