Instructions:
Marinate the chicken thighs in the oil, lemon juice, vinegar, oregano, thyme, garlic, salt, and pepper in a zip lock bag for 3 hours or overnight.
Preheat oven to 400°
Put parchment paper on baking trays. Put chicken thighs skin-side up, leaving space between them.
Roast for 30-35 minutes or until the internal temperature is 165° and the skin is golden brown.
