  • Shred the red cabbage and chop the apple into small pieces. If you're shredding your own carrots, you can do that now.
  • Place the cabbage, apple, and carrots in a large bowl and add 1 tbsp of lime juice. Toss to coat.
  • In a separate bowl, add the mayo, 1 tbsp lime juice, sea salt, black pepper, and maple syrup. Whisk until thoroughly mixed.
  • Pour the dressing over the top and toss to coat it well.
  • You can eat this immediately or chill for an hour so that the flavors can mingle.
