Easy Coleslaw
Ingredients:
- 1.5 heads Red Cabbage shredded
- 1 Apples diced
- .5 c Shredded Carrots or 2 large carrots, shredded
- 2 tbsp Lime Juice divided
- 0.50 c Mayonnaise
- 0.50 tsp Sea Salt
- 0.50 tsp Ground Black Pepper
- 2 tbsp Maple Syrup
Instructions:
- Shred the red cabbage and chop the apple into small pieces. If you're shredding your own carrots, you can do that now.
- Place the cabbage, apple, and carrots in a large bowl and add 1 tbsp of lime juice. Toss to coat.
- In a separate bowl, add the mayo, 1 tbsp lime juice, sea salt, black pepper, and maple syrup. Whisk until thoroughly mixed.
- Pour the dressing over the top and toss to coat it well.
- You can eat this immediately or chill for an hour so that the flavors can mingle.
