Mu Shu Chicken
Ingredients:
- 1 lb Boneless Skinless Chicken Breasts
- 1 tbsp Coconut Oil
- 1 tbsp Fresh Ginger minced
- 2 cloves Garlic peeled and minced
- 3 c Green Cabbage chopped
- 1 tsp Sesame Oil
- 0.50 tsp Fish Sauce
- 2 tbsp Coconut Aminos Or Tamari
- 1 tbsp Maple Syrup
- 2 Eggs whisked
- 0.25 bunch Green Onions 2 stems, chopped
Instructions:
- Heat a large skillet over medium heat and add 1 tbsp of coconut oil.
- Add the chicken and cook until lightly brown, stirring regularly (about 8 minutes).
- While the chicken is cooking, mince the ginger and garlic and set aside. Chop the green cabbage and set aside.
- When the chicken is almost done, add the garlic and ginger and cook for one minute or until fragrant.
- Add in the cabbage and cook until wilted, roughly 5 minutes.
- Add the sesame oil, fish sauce, coconut aminos, and maple syrup and cook for 2 to 3 minutes.
- Make a well in the center of your pan and add in the whisked eggs and scramble.
- Once the eggs are cooked, mix in with the other ingredients.
- To serve, take a wrap and spoon in some of the filling and sprinkle with chopped green onions. You can also serve this with rice.
