Gluten-Free Buttermilk Pancakes
Ingredients:
- 2 c Oat Flour
- 0.25 c Arrowroot Powder
- 0.50 tsp Baking Soda
- 2 Eggs
- 0.50 c Buttermilk
- .5 c Water
- 2 tbsp Honey
- 1 tsp Vanilla Extract
- 1 tbsp Coconut Oil or butter
Instructions:
- In a mixing bowl, combine all of the dry ingredients and mix until incorporated.
- In a separate bowl, mix together the eggs, buttermilk, water, honey, and vanilla until well combined.
- Add the wet ingredients to the dry ingredients and mix well. You want the batter to be on the thick side, but still pourable. If your batter is too thick, add a little more buttermilk or water.
- Preheat a cast iron skillet over medium heat and melt the coconut oil (can also use butter or pan spray if desired).
- Using a ⅓ measuring cup pour the batter into the hot skillet. Cook until the top starts to look dry, then flip and cook for an additional minute.
- Remove from heat and serve with your favorite toppings.
